Breakfast sausage burritos

Breakfast sausage burritos.Chunky sausage, juicy mushrooms and fresh baby tomatoes – it’s breakfast all wrapped up!

Ingredients

Old El Paso Chilli & Bean Burrito Dinner Kit
250g mushrooms, sliced
225g cherry tomatoes, halved
8 x pork sausages
1 x tbsp corn oil

Kit contains: 8 x Old El Paso Soft Flour Tortillas, 1 x Old El Paso Burrito Spice Mix, 1 x Old El Paso Mild Original Salsa

Instructions

1. Grill the sausages under a preheated moderate grill for 12- 15 minutes, until brown and thoroughly cooked through. Leave to cool for a couple of minutes before chopping into chunky slices.

2. Heat the oil in a large pan and add the mushrooms, cooking over a medium heat for a few minutes until they start to brown. Throw in the sausage slices then stir in the Old El Paso Burrito Spice Mix and 225ml warm water.

3. Cover the pan and simmer on a medium heat for 10 minutes, stirring now and again until the sauce has reduced and thickened. Stir in the cherry tomatoes.

4. Warm the Old El Paso Soft Flour Tortillas following the instructions on the pack.

Make it your way

Grab an Old El Paso Soft Flour Tortillas, pile the sausage and mushroom along the centre, spoon on some Old El Paso Mild Original Salsa and roll up. Fold and tuck in one end like an envelope to make a burrito – then enjoy your burrito brekkie!

Cook’s tips

For a more substantial brunch, serve with scrambled eggs on the side.
