Lime liquado

A refreshingly zesty sparkling drink with fresh limes and mint leaves – perfect for summer evenings!

5 minutes.Serves 4.

Ingredients

600ml sparkling mineral water, chilled
600ml boiling water
100g caster sugar
6 unwaxed limes
A small handful of fresh mint leaves
Ice
Lime slices

Instructions

1. Using a potato peeler, peel the zest from all of the limes, leaving as much of the white outer skin as you can. Keep the zest in a bowl for later.

2. Squeeze the juice from the limes into a large heatproof jug, then add the sugar and lime zest. Pour in 600ml of boiling water and stir well until the sugar has dissolved. Leave to cool down.

3. When the sugar and lime liquid is cool, pour it into a serving jug and stir in the sparkling water and fresh mint leaves. Use a spoon to taste a sip – if it’s too bitter add some extra sugar and mix well.

Make it your way

Pour into tall glasses and throw in a few ice cubes and a slice of fresh lime.

Cook’s tips

Try making lemon liquado by using 4 unwaxed lemons instead – or use half lemons, half limes for a zesty citrus mix!
