Mexican chilli mojito

A rum and lime cocktail with a cheeky chilli kick!

5 minutes.Serves 1.

Ingredients

100ml soda or sparkling water
60ml rum
1 x lime, juiced
1 x rough cane sugar cube
2 x slices fresh red chilli
A few fresh mint leaves
Crushed ice
Fresh mint sprigs and fresh chilli to serve

Instructions

1. Using a pestle and mortar (or the end of a wooden rolling pin and a plastic bowl) crush together the chilli and mint leaves, sugar cube and lime juice, sugar. Keep mashing until the sugar dissolves and the chilli and mint leaves release their flavours.

2. Scoop the chilli, lime and mint mix into a long glass.

3. Now pour in the rum and soda (or sparkling water). Add a scoop of crushed ice and use a long spoon or cocktail stirrer to mix it all together.

Make it your way

Top off with a sprig of fresh mint and serve ice cold. For an added kick, throw in a couple of very small, thin strips of fresh red chilli!

Cook’s tips

If you don’t have fresh chilli but still want the cheeky chilli kick, stir in a drop or two of hot chilli sauce instead!
