Mexican crispy pork fajitas
Tasty fajitas of crispy strips of pork topped with melted cheese, salsa and a big dollop of tangy mustard sour cream.



Ingredients
1 x Old El Paso Oven Baked Crispy Chicken Fajitas Dinner Kit
4 x pork escalopes
100ml sour cream
75g grated Cheese
2tbsp corn oil
1tsp dijon mustard
1 x shredded lettuce
Kit contains: 8 x Old El Paso Soft Flour Tortillas, 1 x Old El Paso Crispy Crumb Seasoning Mix, 1 x Old El Paso Mild Original Salsa, 1 x Old El Paso Shaker Bag
Instructions
1. Preheat the oven to 225ºC (205ºC for fan assisted ovens), gas mark 7.
2. Chuck the oil and Old El Paso Crispy Crumb Seasoning Mix into the Old El Paso Shaker Bag. Add the pork escalopes and give them a shake, coating the pork in the crumb mixture. Press any remaining crumbs onto the escalopes.
3. Put the pork onto a non-stick baking tray and press some grated cheese onto the top of each escalope. Cook for 10 minutes, until the pork is cooked through and the coating crispy. Cut into thin strips.
4. Mix the sour cream with the mustard to create the tasty topping. Warm the Old El Paso Soft Flour Tortillas, following the instructions on the pack.
Make it your way
Stuff your Old El Paso Soft Flour Tortilla with shredded lettuce, strips of pork, the mustard sour cream and the Old El Paso Mild Original Salsa. Roll up and away you go!
Cook’s tips
Try swapping the pork escalopes for pork loin steaks - just trim off any fat, throw them in a food bag and give them a bash with a rolling pin to flatten!
