Original smoky BBQ fajitas

Smoky BBQ chicken, crunchy peppers and onions, salsa, all wrapped up in a warm flour tortilla.

Ingredients

1 x Old El Paso Original Smoky BBQ Fajita Dinner Kit
500g chicken breast
1 x red pepper
1 x green pepper
1 x onion

Kit contains: 8 x Old El Paso Soft Flour Tortillas, 1 x Old El Paso Original Smoky BBQ Fajita Spice Mix, 1 x Old El Paso Mild Original Salsa.

Instructions

1. Slice your chicken breast, peppers and onion into thin strips.

2. Add a splash of oil to a hot pan and stir-fry the chicken until thoroughly cooked.

3. Throw in the onion, peppers and Old El Paso Original Smoky BBQ Fajita Spice Mix.

4. Sizzle away, stirring or tossing until the chicken is browned keeping the veg crunchy.

5. To warm the Old El Paso Soft Flour Tortillas pierce the packaging and microwave on full power for 35-40 seconds (cooking time may vary depending on microwave).  To heat in the oven, remove packaging, separate tortillas and wrap in foil. 10 minutes at 200°C (180°C for fan assisted ovens), gas mark 4 should do it. Keep them covered and warm until ready to serve.

Make it your way

Serve sizzling hot from the pan for all to share. Grab a warm Old El Paso Soft Flour Tortilla each, spoon in the delicious filling and top with Old El Paso Mild Original Salsa. Forget the knives and forks… simply roll and enjoy!

Cook’s tips

This recipe works really well with butternut squash, juicy mushrooms or chickpeas. Or try beefing it up with succulent rump steak instead of chicken.
