Pork and mango fajitas

Chunky pork and juicy mango in a BBQ sauce, wrapped up in a warm tortilla.

Ingredients

1 x Old El Paso Original Smoky BBQ Fajitas Dinner Kit
500g pork tenderloin, cut into small chunks
2 x ripe mangoes, peeled, stoned and cut into small chunks
1 x red onion, cut into small chunks
1 x shredded lettuce
2tbsp corn oil
8 x skewers

Instructions

1. Chuck the Old El Paso Original Smoky BBQ Fajita Spice Mix and oil into a large bowl and stir. Throw in the pork and mango and leave to marinate for 30 minutes.

2. Thread the pork, mango and onion alternately onto 8 skewers. Cook for 8-10 minutes turning occasionally and brushing with any remaining spice mixture, on a medium hot barbecue or grill, until the pork is cooked through.

3. Warm the Old El Paso Soft Flour Tortillas, following pack instructions or place on the barbecue and cook for 20-30 seconds each side.

Make it your way

Make a bed of lettuce on an Old El Paso Soft Flour Tortillas, remove the skewers and pile on the pork and veg - then spoon over the Old El Paso Mild Original Salsa. 

Cook’s tips

For extra fruity fajitas, add some cubes of fresh pineapple to the skewers.
