Roasted tomato and pepper fajitas

Tender strips of chicken, crunchy peppers and onion, topped off with Roasted Tomato and Pepper Salsa and wrapped up in a warm soft flour tortilla.

Ingredients

1 x Old El Paso Roasted Tomato & Pepper Dinner Kit
500g chicken breast
1 x red pepper
1 x green pepper
1 x onion

Instructions

1. Slice the chicken breast, peppers and onion into thin strips.

2. Add a splash of oil to a hot pan and stir-fry the chicken for a couple of minutes.

3. Throw in the onion, peppers Old El Paso Roasted Tomato & Pepper Fajita Spice Mix.

4. Sizzle away, stirring or tossing until the chicken is browned keeping the veg crunchy.

5. To warm the Old El Paso Soft Salsa Tortillas pierce the packaging and microwave on full power for 35-40 seconds. To heat in the oven, remove packaging, separate tortillas and wrap in foil. 10 minutes at 200°C (180°C for fan assisted ovens), gas mark 4. Keep them covered and warm until ready to serve.
