Smoky pork, corn and chickpea fajitas

Tender strips of pork in smoky BBQ Mexican sauce, wrapped up with veg in a soft warm tortilla.

Ingredients

1 x Old El Paso Original Smoky BBQ Fajita Dinner Kit
500g pork steaks, trimmed of fat and cut into thin strips
1 x red pepper, deseeded and diced
1 x can sweetcorn, drained
1 x can chickpeas, drained and rinsed
1tbsp corn oil
Salad leaves
Sour cream to serve

Kit contains: 8 x Old El Paso Soft Flour Tortillas, 1 x Old El Paso Original Smoky BBQ Fajita Spice Mix, 1 x Old El Paso Mild Original Salsa

Instructions

1. Heat the oil in a large frying pan and cook the pork over a medium heat for 3-4 minutes until browned.

2. Throw in the pepper and cook for 2 minutes, then stir in the Old El Paso Original Smoky BBQ Fajita Spice Mix, sweetcorn and chickpeas. Stir-fry until everything is coated in the mixture.

3. Warm the Old El Paso Soft Flour Tortillas, following the instructions on the pack.

Make it your way

Grab a couple of Old El Paso Soft Flour Tortillas, chuck on some lettuce and spoon over the pork mixture. Top with Old El Paso Mild Original Salsa and sour cream, then roll them up!

Cook’s tips

Replace the chickpeas for a can of black beans for Smoky Pork, Corn and Black Bean fajitas.
