Sweet potato and bean burritos
Lightly spiced sweet potato and chunky chilli veg, all snugly wrapped up with cheese and chunky salsa in a burrito.




Ingredients
1 x Old El Paso Chilli & Bean Burrito Dinner Kit
100g grated cheddar cheese
1 x can red kidney beans, drained and rinsed
1 x onion, sliced
1 x large sweet potato (about 250g), peeled and cut into small chunks (rough size)
1 x courgette, diced
1 x red pepper, deseeded and sliced
1tbsp corn oil
Kit contains: 8 x Old El Paso Soft Flour Tortillas, 1 x Old El Paso Burrito Spice Mix, 1 x Old El Paso Mild Original Salsa

Instructions
1. Heat the oil in a large pan and throw in the onion and sweet potato, cook for 2-3 minutes, stirring occasionally.
2. Stir in the courgette and pepper and cook for 2-3 minutes. Add the Old El Paso Burrito Spice Mix and 225ml warm water.
3. Cover and cook over a medium heat, for 10 minutes, stirring occasionally. Chuck in the kidney beans, then cover and simmer for a further 5 minutes, until the vegetables are tender.
4. Warm the Old El Paso Soft Flour Tortillas following the instructions on the pack.
Make it your way
Grab an Old El Paso Soft Flour Tortillas and pile the mixture down the centre, then top with the cheese and Old El Paso Mild Original Salsa. Roll it up and tuck in one end to make a burrito – get stuck in!
