Mexican pork fajita burgers with pineapple salsa
Little spicy pork and chilli burgers wrapped up in soft warm flour tortillas and served with a zesty, herby pineapple salsa.



Ingredients
1 x Old El Paso Original Smoky BBQ Fajita Dinner Kit
1 x jar of Old El Paso Hot & Tangy Jalapeños, finely chopped
500g lean minced pork
6 x spring onions, very finely chopped
4tbsp freshly chopped coriander
Shredded crispy lettuce to serve
Little oil, for brushing
For the pineapple salsa:
225g ripe pineapple, cut into 1cm dice
30ml (2tbsp) freshly chopped mint
30ml (2tbsp) freshly chopped coriander
1 x lime, grated zest and juiced
½ small red onion, very finely chopped
Kit contains: 8 x Old El Paso Soft Flour Tortillas, 1 x Old El Paso Original Smoky BBQ Fajita Spice Mix, 1 x Old El Paso Thick ‘n’ Chunky Salsa.

Instructions
1. In a big bowl, mix together the mince, spring onion, Old El Paso Spice Mix for Original Smoky BBQ Fajitas, Old El Paso Hot & Tangy Jalapeños and chopped coriander. Mix it all together really well then divide the mixture into 8 even sized balls. Use the palm of your hand to flatten each ball, to make 8 little burgers.
2. Brush each burger with a little oil, then cook under a preheated grill or on a barbecue for 4-5 minutes each side, until thoroughly cooked through.
3. Grill the Old El Paso Soft Flour Tortillas for 20 seconds on each side, or follow the instructions on the pack.
Make it your way
Take a warm Old El Paso Soft Flour Tortilla, layer with a bed of lettuce then top with a couple of burgers. Spoon on some Old El Paso Thick ‘n’ Chunky Salsa and a scoop of your special pineapple salsa.
Cook’s tips
For a spicier pineapple salsa, add a chopped red chilli - just make sure you remove all the seeds so that it’s not too hot!
