Spicy bean and cheese quesadillas

Spicy bean and mixed peppers topped with melted cheese, sandwiched between two tortillas – stack ‘em high if you’re feeling hungry!

30 minutes.Mild.Serves 4.Suitable for vegetarians.

Ingredients

1 x Old El Paso Quesadilla Dinner Kit
150g Grated Cheese
2 x cans mixed beans, drained
1 x red pepper, deseeded and chopped
1 x orange or yellow pepper, deseeded and chopped
2tsp corn oil
A handful of chopped coriander
Oil, for brushing

Kit contains: 8 x Old El Paso Corn Tortillas, 1 x Old El Paso Quesadilla Spice Mix, 1 x Old El Paso Mild Original Salsa

Instructions

1. Heat the oil in a frying or griddle pan and cook the peppers, for 2-3 minutes. Chuck in the beans and sprinkle over the Old El Paso Quesadilla Spice Mix and 100ml water. Simmer for 2-3 minutes, and then stir in the coriander.

2. Brush a large frying pan with a little oil. Add an Old El Paso Corn Tortilla and spread with some of Old El Paso Mild Original Salsa. Spoon over a quarter of the bean mixture and the cheese, then place another Old El Paso Corn Tortilla on top. Cook over a moderate heat for 2-3 minutes. Press down with a spatula until the cheese starts to melt.

3. Repeat with the remaining Old El Paso Corn Tortillas, Old El Paso Mild Original Salsa, bean mixture and cheese.

Make it your way

Cut the quesadilla into wedges and serve with a mixed salad.

Cook’s tips

For added taste, extra crunch and a lovely stripy top, try cooking them in a griddle pan!
