Spicy chicken and courgette fajitas

Succulent strips of chicken, onion, peppers and courgettes in a spicy tomato and pepper sauce.

Ingredients

1 x Old El Paso Roasted Tomato & Pepper Fajita Dinner Kit
500g boneless, skinless chicken breasts, cut into thin strips
1 x onion, sliced
1 x red pepper, deseeded and sliced
1 x yellow pepper, deseeded and sliced
1 x courgette, cut into thin strips
2tbsp clear honey
1tbsp corn oil
A small handful of chopped coriander
Sour cream to serve

Instructions

1. Heat the oil in a frying pan and cook the chicken over a medium heat for 3-4 minutes until browned.

2. Chuck in the onion, peppers and courgette and cook for 2-3 minutes, then sprinkle the Old El Paso Roasted Tomato & Pepper Fajita Spice Mix and the honey. Stir-fry until everything is coated in the mixture and until the chicken is thoroughly cooked.

3. Warm the Old El Paso Soft Salsa Tortillas, following the instructions on the pack.

Make it your way
