Both vegetarians and meat eaters will love these super spicy cauliflower steak burgers!
Ingredients
4 tablespoons olive oil
Juice of 1 lemon or 1 large lime plus extra wedges, to serve
2 teaspoons chipotle chilli flakes
1 teaspoon ground cumin
1 tablespoon runny honey
4 cauliflower steaks, each about 1.5cm thick and 160g weight (see Tips)
4 large wholemeal burger buns, split
4 tablespoons Old El Paso™ Chunky Guacamole
30g baby spinach leaves
4 medium tomatoes, sliced
1 carrot, peeled into ribbons
4 tablespoons Old El Paso™ Soured Cream
Instructions
Mix together the oil, lemon or lime juice, chilli flakes, cumin and honey in a large shallow dish. Add the cauliflower steaks and turn to coat in the marinade. Cover and marinate at room temperature for 30 minutes. Meanwhile, preheat the barbeque to a medium- high heat.
Barbecue the cauliflower steaks for 10-15 minutes on each side, basting occasionally with any remaining marinade, until the steaks are charred and just tender (see Tips). Cover with the barbecue lid after about 10 minutes.
Toast the cut sides of the burger buns for 30 seconds on the barbecue (or under a medium grill). Top the bottom bun halves with a spoonful of guacamole and a few spinach leaves. Top each with a cauliflower steak, tomato slices, carrot ribbons, a spoonful of soured cream and the burger lid. Serve with lemon or lime wedges.
Expert Tips
You will need 2 medium cauliflowers to cut the ‘steak’ slices from. Trim away the leaves then cut down through the centre of each cauliflower to get two 1.5cm thick slices from each one. Save the left over cauliflower for making cauliflower rice or a roasted cauliflower salad.
Depending on the heat of your barbecue, the timing for cooking the steaks may vary slightly. If the steaks start to over-char before they are tender, then move to the cooler sides of the barbecue and turn more frequently. Or transfer to a barbecue tray and cover tightly with foil for the last 10 minutes of cooking time.
