  • 1x pack of Old El Paso Street Vibes Soft Tacos
  • 1x Old El Paso Taco Seasoning Mix
  • 6x medium eggs
  • 6x pork sausages, skin removed
  • 6x slices Mexican or American-style cheese
  • Oil, for frying

TO SERVE

  • Old El Paso Thick N’ Chunky Salsa
  • Old El Paso Jalapenos

Preparation

  1. In a large bowl, add the sausages (skin removed) with the Old El Paso Taco Seasoning Mix, combining until thoroughly mixed together.
  2. Splitting the sausage mix into 6 equal portions, press onto each individual Old El Paso Street Vibes Soft Tacos - ensuring an equal spread to the edges of the tortilla.
  3. In a medium frying pan, heat 1 tbsp of oil over a medium-high heat then place two tortillas at a time into the pan, sausage side down.
  4. Cook for 5-8 minutes, until the sausage meat has browned and cooked through.
  5. Flip the tortilla and turn the heat to a low setting, placing a slice of cheese onto the cooked sausage and covering with the lid for 30 seconds - 1 minute, until the cheese is melted.
  6. In the meantime, in a separate frying pan, fry the eggs to your liking.
  7. Remove the tortillas from the pan, top with the fried egg, Old El Paso Jalapenos and Old El Paso Thick N’ Chunky Salsa.

Expert Tips

  • If you’re not in the mood for a fiery breakfast, swap the jalapenos for sliced avocado for a cooler finish!
